Peanut Butter Cookies

Crumbly, golden sweetness with a nutty crunch, bite-sized satisfaction. Following their predecessors like a well-trained force..is one really ever enough? Easier than a cake and can last twice as long, is the cookie. My favourite;  Peanut butter with maybe a few chocolate chips tossed in.

My little brother asked me to make some and so I did, although I seem to have misplaced the recipe i used before. But never fear Internet is here…ok was nothing i wanted on there so i found one that was ok and then changed it completely (it also didn’t give oven temp so i just had to guess) sure i had the gist of it. Tossed all my ingredients together and the result was? Oh gosh, some really nice cookies here. Anyone want to come over for a sample? Nope! Ok more for me nom nom……

Cookies

makes 30 small cookies

1 cup of crunchy peanut butter

1 cup soft brown sugar

1 tsp vanilla extract

1 tsp baking powder

1 egg

a handful of chocolate chips optional

1. Beat the peanut butter and sugar in a bowl until well combined. Then add the vanilla and baking powder, stir well then add the egg and mix to a glossy consistency.

1 a. (Optional) Toss in a small handful of chocolate chips and stir into the mix.

2. Prepare a few baking trays with greaseproof paper. Drop small teaspoon sized blobs of the cookie mix onto the trays and have  well spread out. bake in a preheated oven at 180C (may vary with your oven) for 10 mins approx.

3. Cool on a tray. Serve with a cold glass of milk.
