Damson Almond Sponge

The damsons and almonds decorate this cake, making it look very pretty but also sophisticated. served hot with cream or cold dusted with icing sugar it’s really tasty and great to make in advance or when short on time.

If you don’t have damsons then don’t worry, this cake will also work well with quartered plums, sliced apples, peaches or other combinations of fruit. I like to experiment with flavours so try adding a fruit you like paired with almonds or even make it nut free.

125g  Gluten free Self Raising Flour

125g Castor Sugar

125g Butter/Margarine

2 Eggs

1 tsp vanilla or 1/2 tsp almond extract

8-12 Damsons

16-20 Blanched Almonds

1. Preheat oven to 180C and grease a 20cm tart tin or pie dish with a removable base.

2. Beat the flour, sugar, butter, eggs and extract untill light and fluffy.

3. Pour the mix into the dish/tin. half the damsons and remove the stones then place damsons and almonds on to the mix. Make a pretty pattern

4. Bake for 15-20 mins. Leave to cool in the tin.
