Butter Cream Cupcakes

Quick, easy and wonderfully cute. Vanilla cupcakes topped with simple to make butter cream and SPRINKLES…..is there any need to say more?………

……….A 2-year-old can bake these! Admittedly with some adult supervision.

Cupcakes

3 Eggs

Sugar

Self Raising Flour

Butter

1 tsp Vanilla extract

Butter cream

200g Icing Sugar

100g Butter                                                            Pink= Vanilla, Yellow=Lemon, Brown=Chocolate 

Food colouring

Flavours! e.g melted chocolate, extracts, juice

Sprinkles…all kinds, try coconut or cereal… like rice crispies, chocolate chips, chopped up candy

1. Weigh your eggs and then add equal weights of sugar, flour, butter and then one tsp of vanilla. Mix well till all combined and creamy.

2. Scoop into cupcake cases, then get your responsible Adult helper to pop them in a preheated oven at 180C for 10-15 min.

3. The responsible adult can take them out now and let them cool. Meanwhile…..BUTTER CREAM TIME!

4. Add butter and sugar to a bowl and mix them up. If it needs a bit of help add a drop of warm water….add some food colouring and flavours and whip it up.

5. Spread butter cream on your cupcakes and decorate with sprinkles.

6. Eat and be happy :)

    • Yes, a two year old….mixing and scooping, sprinkeling and eating they can do very well :)
