Stuffed Cookies

Fact: Cookies are amazing! and a combination of chocolate chip surrounding a Oreo is simply genius. I had to try these after seeing this post http://veryculinary.com/2011/03/22/oreo-stuffed-chocolate-chip-cookies/

I would not recommend trying these if you are on a diet or anyone around you is. They are quite big and very heavy so either have after a light meal or share one, although I won’t pop up to stop you if you want to indulge in a full one :)

Makes 30
1 cup  softened butter
3/4 cup packed light brown sugar
1 cup granulated sugar
2 large eggs
1 tbsp vanilla extract
3 1/2 cups flour
1 tsp salt
1 tsp baking soda
2 cups semi-sweet chocolate chips/ roughly chopped bar of chocolate
1 package  Oreos

1. Preheat your oven to 180C or 350F depending. Use a baking sheet (don’t make my mistake DO NOT grease it) to cover your tray.

2. Cream the butter and sugars together. Follow with the eggs and extract, tip in the flour and mix well into a stiff dough.

3. Don’t eat it yet! add your chopped up chocolate or chips and mix. Now take tbsp of dough and wrap it around each Oreo lovingly and place it on the tray. leave lots of space, they will spread.

4. Bake these for 13min. any left over dough (when you run out of Oreos) can be baked for 10min :)

5. take out and leave to cool. Consume in your own time.

Take them to a friends? or....

Keep them and eat with a cup of cold milk!

    These were actually delicious. Though I decided to mix things up by making my own with both a white chocolate and regular chocolate bar. Couldnt eat more than one at a time though,so folks in work shall expect to be fed for the next few days.
