Nutty Cookie Bars
These are cookies that think they are a healthy cereal bar but with the texture of brownies and they are wonderful. Not much else to say really….I got this recipe originally from a good friend of mine and then one day I got lazy. Instead of rolling out each cookie I just pressed the lot in a square cake tin, sprinkled with seeds and baked. Laziness paid off! Because the texture and taste are just somthing a cookie can’t do, they are in the disguise of something ‘healthy’, great for packed lunch and adaptable to whatever you have knocking around your presses.
I threw in some nuts, chocolate, oats, coconuts, seeds of some description and more nuts! But you could add raisin, other chocolate, dried fruits…really whatever you can cram in and love to eat! Try some zest to give a fresh twist maybe :)
100g Soft Brown Sugar
100g Castor Sugar
1tsp Vanilla extract
150g Plain Flour
1/2 tsp baking powder
1/2 tsp bicarbonate of soda
1/2 tsps salt
Add them in!
30g Ground almonds
30g Wheat Germ (Not suitable for Coaliac
hand full of chocolate chips
handful of nuts e.g. hazelnuts (chopped)
Seeds! e.g. sunflour, pumpkin ect.
1. Preheat oven to 180C .Beat the butter and sugars together. when all lovely and pale and creamy add the egg and extract and mix well.
2. Stir in the flour, bicarb, salt, baking soda then the oats.
3. Add in all your favorite things and mix well, you may want to stick your hands in to make sure all is combined.
4. Press into your 20cm squared tin. Bake for 10-15 min untill lightly browned. Take them out and cut but leave to cool completely in tin.
